Le Moutier is the 100% goat’s milk version of Mont St-Benoît, noted as an excellent cooking cheese due to melting and browning at a higher than average temperature.

    Notes: L’Abbaye Saint-Benoit (Saint Benoit Abbey) is not only an internally recognised producer of fine cheeses, it is only the only cheese producer in Canada that is run by Franciscan monks.

    Lindsay Bandaged Goat Cheddar

    Mild-to-medium intensity; a sweet, fruity, slightly acidic start gives way to light earthy notes, cooked milk, caramel, and a trace of tang that lingers on the tongue.

    Notes: The term “bandaged” refers to a traditional aging technique in which the cheese is wrapped in cheesecloth and coated in oil. This permeable “bandage” protects the cheese from excess moisture loss while giving the cheese access to the air it needs to mature properly. The cheese is aged for at least 12 months.

    Pairing: Robust enough to stand on its own, this cheese makes a meal fit for both kings and shepherds when paired with simple bread and a crisp lager.
