This Swiss-type cheese has irregular eyes and a slightly sweet goat’s milk taste. Outstanding features are its cream colour and distinct aroma. Le Moutier is the 100% goat’s milk version of Mont St-Benoît, noted as an excellent cooking cheese due to melting and browning at a higher than average temperature.
Notes: L’Abbaye Saint-Benoit (Saint Benoit Abbey) is not only an internally recognised producer of fine cheeses, it is only the only cheese producer in Canada that is run by Franciscan monks.
